CARPINETO DOGAJOLO, IGT TOSCANA - 2017
Carpineto are pioneers of modern, international-style winemaking in Tuscany. The Dogajolo is left on the lees at very low temperature, then pressed and clarified, before temperature-controlled fermentation with carefully selected yeasts. The newly formed wine is then immediately racked off to preserve the fruity, floral aromas formed during fermentation. The Dogalojo is a medium bodied, dry white wine, pleasantly fruity with elegant aromas and a velvety soft finish and pleasantly velvety white wine with a fruity, elegantly aromatic bouquet and a soft finish. It can be enjoyed both as an aperatif or served with salads, pasta, seafood and white meats, or spicy Asian foods.
