Vincent Girardin is a Chardonnay specialist, based in Meursault (Only 10% of his wine is red). Though his long term aim is to produce wine from his own vines alone, he currently augments his own crop with grapes from other growers, with whom he has long term contracts, allowing him to control vineyard practice. Thus he can insist that most of his production is Biodynamic. Yields are low and a combination of stainless steel and oak are used for fermentation and maturation.
