Bonacchi Vin Santo del Chianti - 2006
Trebbiano Toscano 70%, Malvasia 20%, other local varieties 10%
Cantina Bonacchi, located in the heart of Montalbano, has been making fine Tuscan wines for 3 generations. Currently 60,000HL is produced including Vin Santo, Chianti DOCG, Chianti Classico DOCG, Brunello DOCG, Rosso di Montalcino DOC, Sant’Antimo DOC and Montecucco DOC.
Italy has a long tradition of making sweet wines from dried grapes. After harvest the bunches for this Vin Santo were hung up to dry for about 2 months in well-ventilated rooms. The carefully selected dried grapes were then pressed and the must put into small oak barrels, leaving plenty of room for oxidation to occur. The wine was then left to ferment and age for about 5 years.
A typcial amber colour, this sweet wine has a nose of toffees and caramel through to a palate with balanced sweetness and warm alcohol on the finish. Serve chilled as an aperetif or to accompany desserts and mature cheeses.
